Ingredients (view qty in metric system instead)
4 cups peeled diced apples 2 cups + 2 tsp. sugar 1 cup butter, melted and cooled 3 cups all purpose flour 2 tsp. baking soda 2 tsp. ground cinnamon 2 large eggs 1 tsp. vanilla extract
Directions
Mix together apples and 2 cups sugar in a large bowl. Let stand 2 hours at room temperature, stirring occasionally. Preheat oven to 325 degrees. Grease two 8x4 inch loaf pans. Mix together flour, baking soda and cinnamon. Stir into apples. Add butter, eggs and vanilla. Divide batter between prepared pans. Sprinkle 1 tsp. sugar over the top of each pan. Bake 75 to 90 minutes until a toothpick comes out clean. Cool in pans on a rack for 10 minutes. Remove loaves from pand and cool completely on a rack. Refrigerate, tightly wrapped, until ready to serve.
Makes 2 loaves.
