Ingredients (view qty in metric system instead)
8 boneless skinless chicken breasts, about 4 to 6 ounces each 1 tsp. salt 1/2 tsp. pepper 2 cloves garlic, peeled and crushed 4 tbsp. olive oil 4 tbsp. tarragon vinegar 2/3 cup dry sherry wine
Directions
Preheat oven to 350 degrees. Season chicken all over with salt and pepper. Combine garlic, olive oil and tarragon vinegar in a large skillet over medium high heat. Cook garlic 1 minute, stirring frequently. Add seasoned chicken breasts and cook about 8 minutes until golden brown, turning frequently. Transfer the browned chicken pieces to a large baking dish. Pour the sherry over the chicken and bake about 10 minutes until the chicken is cooked through. Serve chicken immediately.
Serves 8.
