Ingredients (view qty in metric system instead)
1 pound chopped bacon 1 1/2 cups chopped onion 8 large eggs, beaten to blend 1 pound russet potatoes, peeled and grated 2 3/4 cups grated sharp cheddar cheese 1/2 tsp. pepper
Directions
Preheat oven to 350 degrees. Grease 9x13 glass baking dish Cook bacon with onion in large skillet until bacon is crisp, about 8 minutes. Drain on paper towels. Mix together eggs, potatoes, cheddar and pepper. Stir in bacon mixture. Pour into baking dish and spread evenly. Bake until center is set, about 45 minutes. Let stand 5 minutes. Cut into squares.
Serves 6 to 8.
