Ingredients (view qty in metric system instead)
Sauce: 1/4 cup butter 3 tbsp. all purpose flour 2 cups whole milk 1 1/2 cups grated Cheddar cheese
Muffins: 8 slices Canadian bacon 1 tbsp. white wine vinegar 8 large eggs 4 English muffins, split and lightly toasted
Directions
For Sauce: Melt butter in a medium saucepan over medium heat. Add flour and cook 2 minutes, whisking constantly. Add milk and cook about 4 minutes, whisking constantly, until sauce is thickened. Add Cheddar and whisk until melted. Place sauce in the top of a double boiler and keep warm while preparing muffins.
For Muffins: Preheat oven to 300 degrees. Place Canadian bacon slices in a single layer on a sheet pan. Bake about 10 minutes until browned. Meanwhile, fill a large skillet 2 inches deep with lightly salted water. Add vinegar and bring water to a simmer over medium heat. Break eggs one at a time into the skillet. Poach eggs about 4 minutes until whites are set but yolks are runny. Top each toasted English muffin half with 1 slice Canadian bacon and 1 poached egg. Spoon the warm Cheddar sauce over the muffins and serve immediately.
Serves 4.
