Ingredients (view qty in metric system instead)
3 pound beef tenderloin 4 cloves garlic, thinly sliced 1 tbsp. coarse ground pepper 1 pound sliced bacon 3 long fresh rosemary sprigs
Directions
Preheat oven to 450 degrees. Cut twelve 1 inch deep slices into surface of tenderloin. Insert garlic slices into slits. Rub pepper all over tenderloin. Arrange bacon slices in a rectangle, overlapping slightly, on a cutting board. Place 1 rosemary sprig across center of bacon. Place tenderloin over rosemary. Place remaining 2 rosemary sprigs on top of tenderloin. Wrap bacon over tenderloin to seal. Place seam side down in a roasting pan. Roast about 1 hour, until tenderloin reaches 125 degrees for medium-rare. Remove from oven and tent with foil. Let stand 10 minutes. Slice and serve.
Serves 6 to 8.
