Bacon Tomato Clam Chowder for Two Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 slices bacon, chopped
1 small onion, peeled and finely diced
1 rib celery, chopped
1 medium clove garlic, peeled and minced
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup clam juice
1/3 cup dry white wine
1 cup water
2 tsp. canned tomato paste
1 small russet potato, peeled and diced
2 medium tomatoes, seeded and chopped
1 cup chopped clams
2 tbsp. chopped fresh parsley leaves


Directions
Cook bacon in a medium saucepan over medium heat until crisp. Drain bacon on paper towels. Add onion, celery, garlic, salt and pepper to the pan. Cook about 5 minutes, stirring frequently, until onion is softened. Add clam juice, wine, water, tomato paste, potato and tomatoes to the pan. Cover and simmer about 15 minutes until potato is tender. Add clams and parsley. Cover and simmer about 3 minutes. Divide chowder between 2 bowls. Sprinkle with cooked bacon and serve.
