Ingredients (view qty in metric system instead)
6 ounce package wild and long grain rice blend 1 tbsp. vegetable oil 1 medium apple, cored and chopped 1 cup chopped celery 1/2 cup peeled, chopped red onion 1/2 cup chopped dates 1/2 cup slivered almonds 1/2 cup pomegranate juice
Directions
Prepare the rice mix according to the package directions. Meanwhile, Place oil in a skillet over medium high heat. Add apple, celery and red onion to the skillet and cook about 3 minutes until crisp-tender, stirring frequently. Add dates and almonds and continue cooking 1 minute. Add cooked rice and the pomegranate juice. Cook until pilaf is heated through, stirring constantly. Serve rice pilaf immediately.
Serves 4 to 6.
