Ingredients (view qty in metric system instead)
2 cups rinsed fresh rhubarb, cut into 1 inch pieces 3 tbsp. all purpose flour 1 large egg 1 tsp. vanilla extract 1/4 cup cold butter, diced 1 prepared, unbaked 8 inch pie shell
Directions
Preheat oven to 425 degrees. Stir together rhubarb, flour, sugar and egg in a medium bowl. Pour rhubarb mixture into the prepared pie shell. Bake 10 minutes. Reduce oven to 350 degrees. Bake pie an additional 35 to 40 minutes until crust is browned and filling is thickened and bubbly. Transfer pie to a rack and cool.
Makes one 8 inch pie.
