1 1/2 tbsp. vegetable oil 6 loin or rib pork chops, about 6 ounces each 1 large onion, peeled and chopped 1 large green bell pepper, stemmed, seeded and chopped 2 tbsp. brown sugar 2 tbsp. lemon juice 1 tbsp. Worcestershire sauce 1 tsp. chili powder 1/2 tsp. salt 1/2 tsp. yellow mustard 1 cup water 8 ounce can tomato sauce
Directions
Heat oil in a large skillet over medium high heat. Add pork chops to the skillet and brown on both sides. Transfer chops to a plate. Add the onion and bell pepper to the skillet and cook about 5 to 8 minutes until onion is softened, stirring occasionally. Drain juices from the skillet. Stir brown sugar, lemon juice, Worcestershire, chili powder, salt, mustard and water into the skillet. Return pork chops to the skillet and arrange in a single layer. Pour the tomato sauce around the chops. Cover the skillet and reduce heat to medium low. Simmer the pork about 45 to 60 minutes until tender and cooked through. Transfer the pork to a platter. Skim the grease from the pan juices. Spoon the juices over the pork chops and serve.
