Asparagus Au Gratin Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 pounds asparagus cut into 2 inch pieces
2 tbsp. butter, diced
1/4 tsp. salt
1/4 tsp. pepper
1 cup fresh breadcrumbs
2 tbsp. olive oil
2 tbsp. chopped fresh parsley


Directions
Preheat oven to 425 degrees. Bring 3 cups water to boil in a saucepan. Add asparagus and boil 1 minute. Drain. Toss with butter, salt and pepper. Toss together bread crumbs with olive oil and parsley. Sprinkle over asparagus. Bake 8 to 10 minutes until crumbs are browned.

4 to 6 servings.
