Ingredients (view qty in metric system instead)
6 cups beef broth 3 cups water 4 cups peeled and diced sweet potatoes 2 tsp. minced garlic 6 cups thinly sliced green cabbage 2 1/2 cups trimmed sugar snap peas or halved snow peas 8 ounce package capellini(angel hair) pasta, broken into thirds 2 tbsp. teriyaki sauce 2 tbsp. dark sesame oil sliced green onions
Directions
Combine beef broth and water in a large pot and heat to a boil. Add sweet potatoes and garlic. Reduce heat, cover and simmer about 8 minutes until sweet potatoes are crisp-tender. Stir in cabbage. Increase heat to medium and simmer cabbage 5minutes. Stir in sugar snap or snow peas, pasta and teriyaki sauce. Simmer 4 to 5 minutes until cabbage and potatoes are tender. Stir in sesame oil. Garnish soup with green onions and serve.
Serves 4 to 6.
