Ingredients   (view qty in metric system instead)
3 pounds perch or cod fillets
1 cup buttermilk
1 lemon, sliced
2 cups vegetable oil
2 cups prepared pancake mix plus additional for dredging
2 1/2 cups club soda
2 pounds frozen cottage style crinkle-cut potatoes

Directions
Place fish fillets in a large baking dish. Pour buttermilk over fish and place lemon slices on top. Cover and refrigerate fish 1 hour. Discard lemon slices and drain buttermilk from fish. Cut fillets in half to make triangular shapes. Heat oil to 350 degrees in a large saucepan. Whisk together 2 cups pancake mix and club soda in a medium bowl until smooth. Place additional pancake mix in a pie plate. Working in batches, dredge fish fillets in pie plate, shaking off excess. Dip in batter to coat. Add to hot oil and fry about 4 minutes per side until fish is crisp, browned and cooked through. Drain on paper towels. Cut potatoes in half and fry as for french fries. Serve fish with chips.
