Ingredients (view qty in metric system instead)
3 pounds perch or cod fillets 1 cup buttermilk 1 lemon, sliced 2 cups vegetable oil 2 cups prepared pancake mix plus additional for dredging 2 1/2 cups club soda 2 pounds frozen cottage style crinkle-cut potatoes
Directions
Place fish fillets in a large baking dish. Pour buttermilk over fish and place lemon slices on top. Cover and refrigerate fish 1 hour. Discard lemon slices and drain buttermilk from fish. Cut fillets in half to make triangular shapes. Heat oil to 350 degrees in a large saucepan. Whisk together 2 cups pancake mix and club soda in a medium bowl until smooth. Place additional pancake mix in a pie plate. Working in batches, dredge fish fillets in pie plate, shaking off excess. Dip in batter to coat. Add to hot oil and fry about 4 minutes per side until fish is crisp, browned and cooked through. Drain on paper towels. Cut potatoes in half and fry as for french fries. Serve fish with chips.
Serves 6.
