Ingredients (view qty in metric system instead)
Crust: 1/2 cup butter 1/4 cup brown sugar 1 cup all purpose flour
Filling: 1 cup dried apricots 1/3 cup all purpose flour 1/2 tsp. baking powder 3 large eggs 1 cup brown sugar 1 tsp. vanilla extract
Directions
For crust: Preheat oven to 350 degrees. Stir together sugar and flour. Cut in butter until mixture looks like coarse crumbs. Press into the bottom of a greased 9x9 inch baking pan. Bake 20 minutes. Cool.
For filling: Simmer apricots in water to cover until tender, about 10 minutes. Drain, cool and puree. Stir together flour and baking powder. Beat eggs until light and fluffy. Add flour mixture, sugar, apricot puree and vanilla. Spread over crust and bake until set, about 25 to 30 minutes.
Makes approximately 12 squares.
