Ingredients (view qty in metric system instead)
1 cup dried apricots 1 1/3 cups all purpose flour, divided 1/2 cup butter, softened 1/4 cup sugar 1 cup brown sugar 2 large eggs 1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. vanilla extract 1/2 cup finely chopped, toasted walnuts
Directions
Place apricots in a medium saucepan with enough water to cover. Boil about 10 minutes until apricots are tender. Drain apricots and cool completely before mincing finely. Preheat oven to 350 degrees. Butter an 8x8 inch baking dish. Combine 1 cup flour and 1/4 cup sugar in a food processor. Pulse to blend. Add butter and blend until moist clumps form. Press the dough into the bottom of the prepared dish. Bake 20 minutes. Transfer dish to a rack and cool completely. Beat together brown sugar and eggs in a large bowl. Sift together remaining 1/3 cup flour, baking powder and salt in a small bowl. Beat the flour mixture into the batter until blended. Stir in vanilla, walnuts and minced apricots. Spread the apricot mixture completely over the cooled shortbread crust. Bake about 25 minutes until topping is puffed and golden. Transfer the dish to a rack and cool completely before cutting into bars.
Makes about 1 1/2 dozen bars.
