Ingredients (view qty in metric system instead)
1 cup dried apricot halves 1/2 cup dry sherry 3 to 4 pounds pork tenderloin 1 cup dark corn syrup 1/2 cup orange juice 1/4 cup soy sauce 1 tbsp. finely grated orange peel
Directions
Preheat oven to 325 degrees. Combine apricots and sherry in a medium saucepan. Cover and cook over medium heat until the liquid is absorbed, stirring occasionally. Cut deep slits in the pork. Place 3 or 4 apricots in each slit. Transfer pork to a roasting pan. Roast 30 minutes. While pork is roasting, combine corn syrup, orange juice, soy sauce and orange peel in a small saucepan. Bring to a boil over medium high heat. Reduce heat and simmer 5 minutes. Brush the pork with some of the orange mixture. Roast pork an additional 30 minutes, brushing frequently with the orange mixture, until pork reaches 160 degrees. Transfer pork to a cutting board and let stand 5 minutes before slicing and serving.
Serves 6 to 8.
