Ingredients   (view qty in metric system instead)
1 cup dried apricots, chopped
1 cup sugar
1 cup quick cooking oats
3/4 cup wheat flour
1/4 cup cake flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 cup frozen orange juice concentrate, thawed
1 large egg
2 tbsp. vegetable oil
1 cup chopped walnuts or pecans

Directions
Preheat oven to 350 degrees. Grease a 9x5 loaf pan. Combine apricots with water to cover in a saucepan. Simmer about 15 minutes until apricots are tender. Drain and cool. Stir together sugar, oats, flours, baking powder, salt and baking soda in a large bowl. Stir in orange juice, egg, oil, nuts and apricots. Transfer to loaf pan and bake about an hour, until edges are browned and toothpick comes out clean. Cool in pan 15 minutes. Turn out onto a rack and cool completely.

Makes 1 loaf.
