Ingredients (view qty in metric system instead)
1 tbsp. olive oil 2 shallots, thinly sliced 1/2 cup apricot preserves 1 tbsp. fresh lemon juice 1/2 tsp. tabasco sauce 1/4 tsp. creole seasoning 2 to 3 pound prepared rotisserie chicken
Directions
Preheat oven to 350 degrees. Heat oil in a medium saucepan. Add shallot and cook until tender, about 3 to 5 minutes. Stir in preserves, lemon juice, tabasco and creole seasoning. Reduce heat to low and simmer 5 minutes. Brush glaze over chicken and place on a rack in a foil lined roasting pan. Bake 15 minutes.
Serves 4.
