Ingredients (view qty in metric system instead)
Muffins: 1 1/2 cups butter, room temperature 1/2 cup sugar 4 large eggs, beaten to blend 2 tsp. vanilla extract 1 tsp. finely grated orange peel 3 cups drained, finely chopped, canned apricot halves 5 cups all purpose flour 8 tsp. baking powder 2 tsp. salt
Streusel: 1/4 cup flour 2 tbsp. softened butter 2 tbsp. sugar 1/2 cup sliced almonds
Directions
For Muffins: Preheat oven to 375 degrees. Grease two, 12 cup muffin tins or line with paper liners. Cream together butter and sugar in a large bowl until smooth. Add eggs one at a time, beating after each addition. Beat in vanilla, orange peel and chopped apricots. Stir together flour, baking powder and salt in a medium bowl. Fold into batter just until combined. Spoon about 1/3 cup plus 1 tbsp. batter into each prepared muffin cup. Top each muffin with 2 tsp. streusel and bake about 20 to 25 minutes until a toothpick comes out clean. Transfer muffins to a rack to cool slightly. Serve warm or at room temperature.
Streusel: Stir together flour, butter and sugar until evenly moistened and crumbly. Stir in almonds.
Makes 2 dozen muffins.
