Ingredients (view qty in metric system instead)
Pancakes: 2 cups buttermilk baking mix 1 cup milk 2 large eggs, beaten to blend 1 cup applesauce 1 tbsp. butter + additional if necessary
Syrup: 3/4 cup apple jelly 1/2 cup applesauce 1/4 tsp. ground cinnamon pinch ground cloves
Directions
For Pancakes: Mix baking mix, milk, eggs, and applesauce in a large bowl until well blended. Melt butter in a large skillet. Add 1/4 cup batter to skillet and cook until browned, turning once, about 1 minute per side. Repeat with remaining batter, adding more butter if necessary. Serve immediately with syrup on the side.
For Syrup: Melt apple jelly in a small saucepan over low heat. Stir in applesauce, cinnamon and cloves and heat through.
Makes approximately 8 pancakes.
