Ingredients (view qty in metric system instead)
Dressing: 2 cups water 1/2 cup sugar 3 tbsp. pectin powder 1 tbsp. white vinegar 1/2 tsp. soy sauce 1 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. pepper 1/4 tsp. paprika
Salad: 1 cup prepared teriyaki marinade 4 boneless skinless chicken breast halves 8 cups chopped romaine lettuce 8 cups chopped iceberg lettuce 3 cups shredded red cabbage 3 cups shredded green cabbage 2 cups shredded carrots, divided 1 cup chopped green onion 1 1/3 cups crisp chow mein noodles
Directions
For Dressing: Combine water, sugar, pectin powder, vinegar, soy sauce, salt, garlic powder, pepper and paprika in a small saucepan. Bring to a boil over medium heat, whisking frequently. Remove pan from heat and cool to room temperature. Transfer cooled dressing to an airtight container and refrigerate until cold.
For Salad: Combine teriyaki marinade and chicken breast halves in a medium bowl. Cover and refrigerate 3 to 4 hours. Preheat grill. Remove chicken from marinade and grill 3 to 4 minutes per side until cooked through. Combine romaine and iceberg lettuces, red and green cabbages and 1 cup shredded carrots in a large bowl. Add dressing and toss well. Divide salad between 4 large plates. Sprinkle 1/4 cup green onions and 1/3 cup chow mein noodles over each salad. Slice each chicken breast half crosswise into bite-size pieces. Sprinkle chicken over salads. Place 1/4 cup shredded carrots in a mound in the center of each salad.
Serves 4. Each salad contains 12 grams of fat.
