Ingredients (view qty in metric system instead)
Filling: 1/3 cup sugar 1/2 vanilla bean, split lengthwise 2 to 2 1/2 pounds granny smith apples, cored, peeled and sliced 1/2 inch thick 1 1/2 tbsp. all purpose flour 1 tbsp. fresh lemon juice pinch ground nutmeg
Topping: 1 cup all purpose flour 2/3 cup sugar 1/8 tsp. ground cinnamon pinch salt 1/2 cup cold butter, diced
Directions
For Filling: Preheat oven to 400 degrees. Place sugar in a large bowl. Scrape seeds from inside of vanilla beans and add to sugar. Rub together with your fingertips to blend seeds and sugar. Add apples, flour, lemon juice and nutmeg and toss to coat. Transfer apple mixture to an 8x8 inch square glass baking dish. Place dish on a foil-lined sheet pan and bake 25 minutes until apples are tender and browning. Stir apples. While filling is baking, prepare topping.
For Topping: Blend together flour, sugar, cinnamon and salt in a food processor. Add butter and process until coarse crumbs form. Sprinkle evenly over hot apples. Bake about 25 minutes until topping is golden brown. Cool 10 minutes on a rack before serving.
Serves 6 to 8.
