Ingredients (view qty in metric system instead)
Crust 1/2 cup butter or margarine 1 1/2 cups all-purpose four 1/2 tsp. salt 5-7 Tbs. iced water 1 egg lightly beaten
Filling 3/4 cup sugar 1/4 cup all-purpose flour 1/2 tsp. ground cinnamon 1/4 tsp. gound nutmeg 2 lbs. Granny Smith apples peeled, cored, cut into 1/2" thick wedges 2 lbs. Bosc pears, peeled, cored, cut into 1/2" thick wedges 1/2 cup mixed dried-fruit bits
Crumb Topping 2 cups all-purpose flour 1/2 cup quick-cooking rolled oats 1/3 cup granulated sugar 1/3 cup packed dark brown sugar 3/4 tsp ground cinnamon 1/8 tsp salt 3/4 cup butter or margarine, melted Confectioners' sugar and vanilla ice cream, optional
Directions
Crust**
Cut butter into 1/2" cubes; freeze 10 minutes. In bowl combine flour and salt. With pastry blender cut in butter until mixture resembles coarse crumbs. Stir in 5 Tbs. ice water; squeeze mixture with hands to form dough. If dough is too dry to form into ball, stir in additional ice water 1 Tbs. at a time. Shape into disk; cover. Refrigerate at least 1 hour.
On lightly floured surface roll out dough into 14" circle. Fit into 9" pie pan. Turn edge under and flute with fingers. Brush edge with egg. Refrigerate until ready to use.
Filling and Crumb Topping
Place foil covered jellyroll pan on rack in lower third of oven. Preheat oven to 425 degrees. In large bowl combine sugar, flour, cinnamon and nutmeg. Add apples, pears and dried fruit; toss to combine. Arrange in pie shell. Bake on hot jellyroll pan 15 minutes. Cover fruit with foil. Reduce oven temperature to 350 degrees. Bake 1 hour. Meanwhile, in bowl combine flour, oats granulated sugar, brown sugar, cinnamon and salt; stir in butter. With hands squeeze mixture to form crumbs. Uncover pie; place crumbs over hot filling. Bake uncovered 50 minutes or until crumbs are browned and fruit is bubbling. Cool completely on rack. If desired, serve with confectioners' sugar and ice cream.
** Make an easier crust by substituting 1 sheet (half of 15 oz pkg) refrigerated 9" pie crust dough for homemade crust.
