8 tbsp. butter, room temperature, divided 1/2 cup plus 3/4 cup sugar 1 1/2 pounds golden delicious apples, cored, peeled, halved and cut into wedges 3/4 cup all purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/3 cup yellow cornmeal 1/2 cup boiling water 2 large eggs 1 tsp. vanilla extract 1/3 cup milk
Directions
Preheat oven to 350 degrees. Butter a 9 inch cake pan. Line bottom of pan with a 10 inch round of buttered parchment paper(paper will come part way up sides of pan. Melt 2 tbsp. butter in a large skillet. Add 1/2 cup sugar and cook until golden brown, stirring occasionally, about 6 minutes. Add apples and stir to coat. Cover and cook apples 5 minutes. Uncover pan and cook until apples are tender and caramel is thickened, About 13 to 15 minutes. Spread apple mixture evenly in the bottom of the prepared pan. Whisk together flour, baking powder and salt in a large bowl. Place cornmeal in a large bowl and pour boiling water over. Stir to blend. Add 6 tbsp. butter and 3/4 cup sugar. Beat with a mixer until well blended. Beat in eggs and vanilla. Add flour mixture in 2 additions alternately with milk. Pour over apples in prepared pan. Bake about 40 minutes until cake is golden and a toothpick comes out clean. Cool cake in pan 5 minutes. Invert cake onto a serving plate and peel off parchment. Cool 15 minutes. Serve warm.
Serves 6 to 8.
