Apple Spice Cupcakes with Cream Cheese Frosting

Ingredients (view qty in metric system instead)
Cupcakes: 3/4 cup butter, room temperature 1 1/2 cups sugar 3 large eggs 1/2 cup milk 1 1/2 tsp. vanilla extract 2 1/4 cups cake flour 2 tsp. ground cinnamon 1 tsp. ground allspice 1 tsp. ground ginger 2 tbsp. baking powder 3/4 tsp. salt 1 cup peeled, finely shredded apple 1 cup finely chopped walnuts
Frosting: 8 ounces cream cheese, room temperature 4 tbsp. butter, room temperature 1 1/2 tsp. vanilla extract 2 cups powdered sugar, sifted
Directions
For Cupcakes: Preheat oven to 375 degrees. Line 20 muffin cups with paper liners. Beat together butter and sugar in a large bowl until light and fluffy. Add eggs 1 at a time, beating after each addition. Beat in milk and vanilla. Sift together flour, cinnamon, allspice, ginger, baking powder and salt in a medium bowl. Add the flour mixture to the batter and beat 2 minutes on High speed. Stir in shredded apple and walnuts. Divide batter between the muffin cups, filling each about 3/4 full. Bake cupcakes about 20 to 25 minutes until a toothpick comes out clean. Transfer cupcakes to a rack and cool completely. Frost cupcakes with cream cheese frosting.
For Frosting: Beat together cream cheese and butter in a large bowl until light and fluffy. Beat in vanilla. Add powdered sugar and beat until smooth.
Makes 20 cupcakes
