Ingredients (view qty in metric system instead)
1 1/4 cups all purpose flour 1 tsp. baking soda 1/2 tsp. ground cinnamon 1/8 tsp. salt 1 cup sugar 1/2 cup vegetable oil 1 large egg 2 tbsp. fresh lemon juice 1 1/2 tsp. vanilla extract 3/4 tsp. grated lemon peel 2 cups peeled, coarsely grated granny smith apples 1/2 cup toasted pecans, chopped
Directions
Preheat oven to 350 degrees. Grease 1/2 cup muffin cups or line with cupcake papers. Sift together flour, baking soda, and cinnamon. Stir in salt. Stir together sugar, oil, egg, lemon juice, vanilla and lemon peel. Stir in dry ingredients, apple and pecans. Spoon about 1/3 cup batter into each muffin cup. Bake about 35 minutes, until toothpick comes out clean. Turn out onto rack and cool slightly. Serve warm.
Makes about 12 muffins.
