Ingredients (view qty in metric system instead)
4 center cut pork chops, about 6 to 8 ounces each 1/4 cup creamy peanut butter 1/4 cup dry, seasoned breadcrumbs 1/2 cup diced apple 1/4 cup minced onion 1 tsp. salt 1 tsp. pepper 2 tbsp. vegetable oil 1/2 cup apple jelly, melted
Directions
Preheat oven to 450 degrees. Cut a horizontal pocket into the side of each pork chop. Stir together peanut butter, bread crumbs, apple and onion in a medium bowl. Pack the stuffing mixture into the prepared pockets in the pork chops. Seal pockets with toothpicks. Season pork all over with salt and pepper. Heat oil in a large skillet over medium high heat. Add chops and brown on both sides. Transfer pork chops to a large baking dish. Bake chops 15 minutes. Baste well with the melted apple jelly and bake an additional 5 minutes until cooked through. Serve pork chops immediately.
Serves 4.
