Ingredients (view qty in metric system instead)
3 cups water 1/2 cup orange juice 3/4 cup dark brown sugar 1 tbsp. molasses 4 inch strip lemon peel 4 inch strip orange peel 2 whole cloves 1/4 cup butter 12 slices cinnamon raisin bread 1 1/2 pounds Golden Delicious apples, peeled and coarsely grated 2 cups grated Cheddar cheese
Directions
Preheat oven to 350 degrees. Butter a 2 quart shallow baking dish. Combine water, orange juice, brown sugar, molasses, lemon peel, orange peel and cloves in a medium saucepan. Heat to a boil, stirring to dissolve sugar. Reduce heat and simmer 20 minutes. Discard citrus peels and cloves. Melt 1 tbsp. butter in a large skillet over medium heat. Add 4 slices of the cinnamon raisin bread to the pan and brown on both sides. Repeat with remaining butter and bread, working in 2 batches. Place 4 slices bread in the bottom of the prepared dish. Top with 1/3 of the apples and 1/3 of the cheddar. Repeat layering twice more. Pour the molasses syrup over the top and dot with the remaining 1 tbsp. butter. Bake pudding about 40 minutes until puffed and golden brown. Serve pudding warm.
Serves 6 to 8.
