4 pork chops, about 6 to 8 ounces each 1 tsp. ground sage 1 tsp. salt 1 tsp. pepper 2 1/2 tbsp. butter, divided 1 large onion, peeled and thinly sliced 1 large Granny Smith apple, peeled, cored, halved and thinly sliced 1/2 cup chicken broth 1/4 cup apple juice
Directions
Pat pork dry. Stir together sage, salt and pepper in a small bowl. Rub the sage mixture into both sides of the pork chops. Melt 1 1/2 tbsp. butter in a large skillet over medium high heat. Add pork and brown 1 minute per side. Transfer pork to a plate. Add onion to the skillet and cook about 8 minutes over medium heat until tender. Add apple and cook 2 minutes. Return pork chops to the skillet. Add the broth and apple juice and bring to a boil. Reduce heat, cover and simmer pork about 5 minutes until just cooked through, turning occasionally. Divide pork chops between plates. Boil pan juices about 3 minutes until starting to thicken. Stir in remaining 1 tbsp. butter. Spoon sauce over the chops and serve.
Serves 4.
