Ingredients (view qty in metric system instead)
Shortbread Base: 3/4 cup cold butter, diced 2 cups all purpose flour 1/2 cup brown sugar 1/4 tsp. salt
Filling: 2 pounds Granny Smith apples, peeled, cored, halved and thinly sliced 2/3 cup sugar 2 tbsp. all purpose flour 3/4 cup fine dry breadcrumbs 1/2 cup plus 2 tbsp. butter, melted
Directions
For Shortbread: Preheat oven to 350 degrees. Combine flour, brown sugar, salt and butter in a food processor. Blend until clumps form. Sprinkle evenly over the bottom of a 13x9 inch baking pan and press to form crust. Bake about 20 minutes until golden. Meanwhile, prepare filling.
For Filling: Stir together sugar and flour in a small bowl. Sprinkle half of mixture evenly over shortbread crust. Top with sliced apples and sprinkle with remaining sugar-flour mixture. Sprinkle breadcrumbs evenly over. Drizzle butter over breadcrumbs. Bake 25 minutes. Press down on top with a spatula. Bake an additional 25 to 35 minutes until apples are tender and breadcrumbs are golden. Cool 20 minutes in pan on a rack before cutting into squares.
Makes about 12 squares.
