Ingredients (view qty in metric system instead)
2 large avocados, halved, pitted and peeled, 1 pit reserved 1 1/2 cups fine chopped red onion 3/4 cup chopped fresh cilantro 3/4 cup finely chopped red bell pepper 2 tbsp. fresh lime juice 2 tbsp. olive oil 1 jalapeno, minced, seeds left in 1/2 tsp. salt 1/2 tsp. pepper
Directions
Coarsely mash together all ingredients. Place in bowl and place reserved avocado pit in center to aid in preserving color. Cover tightly with plastic wrap and refrigerate.
Makes approx. 3 cups.
