Ingredients (view qty in metric system instead)
4 tbsp. olive oil 2 small zucchini, sliced 1 medium tomato, seeded and chopped 2 large mushrooms, sliced 1 green onion, sliced 1 tbsp. minced garlic 2 tbsp. chopped black olives 1/4 tsp. dry basil 1/4 tsp, dry oregano 4 large eggs 1 1/2 cups grated parmesan 6 ounces cooked angel hair pasta
Directions
Cook cucchini, tomato, mushroom, onion and garlic with 2 tbsp. oil until tender. Add olives and herbs. Preheat broiler. Beat together eggs and parmesan. Mix in vegetables and pasta. Heat 2 tbsp. oil in skillet. Add egg mixture and cook until golden brown on bottom. Move to broiler and cook until top is set, about 2 minutes. Run spatula around edges to loosen and invert onto serving plate. Cut into wedges and serve with additional grated cheese and chopped tomato.
Serves 4.
