1 cup all purpose flour pinch salt 2 cups milk 4 large eggs 12 raw U-15 shrimp, peeled, deveined and butterflied 1 1/2 cups blanched sliced almonds vegetable oil for frying
Directions
Line a sheet pan with wax paper. Stir together flour and salt in a medium bowl. Whisk together milk and eggs in a separate bowl. Place almonds in a third bowl. Dredge shrimp in flour, shaking off excess. Holding shrimp by tails, dip into egg mixture to coat completely. Coat shrimp with almonds, pressing to adhere. Place shrimp on prepared pan and freeze about 90 minutes until firm. Heat oil to 350 degrees in a deep skillet. Add shrimp to oil in batches and fry about 3 minutes until golden brown and cooked through. Drain shrimp on paper towels. Serve with tartar sauce, cocktail sauce and lemon wedges if desired.
