Ingredients (view qty in metric system instead)
1 cup cake flour 1 1/2 cups sugar, divided 1/4 tsp. salt 2 cups large egg whites, room temperature 1 tbsp. finely grated lemon peel 2 tbsp. almond extract 1 tsp. vanilla extract
Directions
Preheat oven to 375 degrees. Sift flour twice in a medium bowl. Stir in 3/4 cup sugar and salt. Beat egg whites in a large bowl until soft peaks form. Gradually beat in remaining 3/4 cup sugar. Add lemon peel and almond and vanilla extracts. Beat just until stiff peaks form. Sprinkle 1/4 of flour mixture over whites and fold in. Fold in remaining flour mixture, 1/4 at a time. Scrape batter into an ungreased 10 inch tube pan with removable bottom. Bake 45 minutes until top of cake is golden brown and a toothpick comes out clean. Invert pan and cool completely. Remove cake from pan and turn upright. Store tightly covered at room temperature.
Serves 8 to 10.
