Ingredients (view qty in metric system instead)
1 1/2 tsp. olive oil 1 1/2 cups fine chopped onion 1 1/2 tbsp. minced garlic 1/4 tsp. dry pepper flakes 1 bay leaf 2/3 cup chicken broth 1 1/2 cups peeled, seeded, diced roma tomatoes 1 1/2 cups whole canned tomatoes, drained and chopped 2 tsp. tomato paste 1 tsp. sugar 1 tsp. salt 1 tsp. pepper
Directions
Combine oil, onion, garlic, pepper flakes, bay leaf and 1/3 cup broth. Cover and cook 5 minutes. Stir in fresh and canned tomatoes and tomato paste. Add sugar, salt, pepper and 1/3 cup broth. Cook 15 minutes. Puree in blender or food processor.
Makes 2 1/2 to 3 cups.
