Ingredients (view qty in metric system instead)
3 pounds stew meat, cut into 1 inch pieces 1 cup red wine 3 1/2 cups beef broth 1 can chopped tomatoes with juices 4 tbsp. tomato paste 6 whole cloves 1/2 tsp. whole black peppercorns 1 tsp. crumbled dried thyme 2 cloves fresh garlic, peeled and mashed 3 slivers orange peel 1 pound carrots, peeled and diced 8 small red potatoes 1/2 tsp. salt 1/4 tsp. pepper
Directions
Combine stew meat and red wine in a large bowl. Cover and refrigerate overnight. Transfer beef mixture to a crock pot. Add beef broth, tomatoes with juices, tomato paste, cloves, peppercorns, thyme, garlic and orange peel. Cover and cook on medium for 11 hours. Add carrots, potatoes, salt and pepper. Cover and cook an additional hour until vegetables are tender.
Serves 6 to 8.
