Ingredients (view qty in metric system instead)
2 medium onions, peeled and diced 4 1/2 tbsp. olive oil, divided 1/3 cup barbecue sauce 1/3 cup tomato sauce 2 tbsp. cayenne pepper sauce 1 1/2 tbsp. all purpose flour 2 cloves garlic, minced 1 1/2 tsp. white vinegar 1 tsp. dried thyme 1/2 tsp. dried oregano 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. ground cumin 2 1/2 pound pork loin roast
Directions
Heat 1 1/2 tbsp. oil in a large skillet. Add onions and cook until tender and browned. Transfer onions to a food processor. Add barbecue sauce, tomato sauce, cayenne pepper sauce, flour, garlic, vinegar, thyme, oregano, salt, pepper and cumin. Process until smooth. Transfer mixture to a large saucepan. Simmer 10 to 15 minutes, stirring occasionally. Heat remaining 3 tbsp. oil in a large skillet. Add pork and sear until browned on all sides. Transfer pork to a roasting pan. Pour sauce over, turning pork to coat. Bake 1 1/2 to 2 hours until internal temperature reaches 165 degrees.
Serves 6.
