Ingredients (view qty in metric system instead)
1 pound ground beef 8 ounce can tomato sauce 3/4 cup chopped green bell pepper 8 ounce can red kidney beans, drained 8 ounces Velveeta Mexican style cheese with jalapenos, cubed, divided eight, 6 inch tortillas vegetable oil for frying 1/2 cup chopped tomato
Directions
Preheat oven to 350 degrees. Brown beef in a large skillet over medium high heat. Drain fat from skillet. Reduce heat to medium and stir in green peppers and tomato sauce. Cook 5 minutes, stirring occasionally. Add kidney beans and half of cheese. Cook, stirring frequently, until cheese is melted. Meanwhile, heat 1 inch oil to 350 degrees in a medium skillet. Place 1 tortilla at a time into oil. Flip over and drain on paper towels. Fill each fried tortilla with 1/4 cup of the beef mixture. Place seam side down in a 12x8 inch baking dish. Spoon remaining beef mixture over tortillas. Cover and bake 20 minutes. Uncover and top enchiladas with remaining cheese. Bake 5 to 8 minutes until cheese is melted. Sprinkle tomatoes and remaining green peppers over enchiladas and serve.
Serves 4.
