Ingredients (view qty in metric system instead)
Crust: 1 1/4 cups all purpose flour 1 1/2 tsp. salt 1 envelope active dry yeast 1 cup hot water(120 to 130 degrees) 2 tbsp. peanut oil 2 cups whole wheat flour
Topping: 15.5 ounce jar pizza sauce 8 ounces shredded mozzarella sliced pepperoni sliced zucchini sliced mushrooms
Directions
For Crust: Stir together 1 cup all purpose flour, salt and yeast in a large bowl. Add hot water and beat 2 minutes. Add peanut oil and 1/2 cup wheat flour. Beat an additional 2 minutes. Stir in remaining all purpose and wheat flours to form a stiff dough. Transfer dough to a floured surface and knead 5 minutes. Coat the inside of a large bowl with cooking spray. Transfer dough to the bowl and turn to coat. Cover dough and let rise 30 minutes in a warm area.
Punch down risen dough. Coat the inside of a 15x10 inch jelly roll pan with cooking spray. Roll the dough out to a 17x10 inch rectangle. Fit the dough into the prepared pan. Fold over dough overhang to form a stand up crust. Cover dough and let rise 10 minutes in a warm area. Preheat oven to 450 degrees. Bake crust 8 minutes.
For Topping: Spread the pizza sauce evenly over the crust. Sprinkle the mozzarella over the sauce. Arrange pepperoni, zucchini and mushrooms over the mozzarella. Bake pizza about 10 to 12 minutes until cheese is melted and lightly browned. Cut pizza into squares and serve.
Serves 6 to 8.
