Ingredients (view qty in metric system instead)
3/4 cup dry navy beans 3 cups water 1 pound canned french cut green beans, drained 1 pound canned yellow wax beans, drained 1 pound canned red kidney beans, drained 3/4 cup chopped green bell pepper 1/2 cup chopped onion 1/2 cup vegetable oil 1/3 cup vinegar 3/4 cup sugar 1 tsp. salt 1/2 tsp. pepper
Directions
Wash and sort navy beans. Combine with water and bring to a boil. Boil 2 minutes. Remove from heat. Cover and let stand 1 hour. Simmer until beans are tender, approx. 2 hours, adding more water if necessary. Drain and refrigerate until cold. Mix canned beans with navy beans. Stir in green pepper and onion. Whisk together oil, vinegar, sugar, salt and pepper. Pour over bean mixture and toss to coat. Refrigerate, covered.
Makes approx. 10 portions.
