Ingredients (view qty in metric system instead)
3 large egg yolks 2 tbsp. sugar 2 tbsp. white vinegar 2 tbsp. pineapple juice 1 tbsp. butter 1/8 tsp. salt 1 cup heavy or whipping cream, whipped to stiff peaks 2 cups canned, pitted white cherries, drained 2 cups canned pineapple tidbits, drained 1 cup mandarin orange segments 24 large marshmallows, chopped
Directions
Combine yolks, sugar, vinegar, pineapple juice, butter and salt in the top of a double boiler over simmering water. Cook until thick, whisking constantly. Cool. Fold in whipped cream, cherries, pineapple bits, mandarin orange segments and marshmallows. Refrigerate 24 hours until set.
Serves 6 to 8.
