Ingredients (view qty in metric system instead)
4 pounds country-style spareribs, cut into individual ribs 3 tbsp. salt 1 1/4 tsp. szechuan peppercorns 2 tbsp. peeled, minced fresh ginger 3 large cloves garlic, peeled and minced 2 tbsp. sesame oil 3/4 cup prepared hoisin sauce 3/4 cup prepared plum sauce
Directions
Line a large baking pan with foil. Place ribs in the prepared pan. Combine salt and szechuan peppercorns in a small skillet. Cook over low heat, stirring occasionally, until salt starts to color, about 10 minutes. Grind mixture in a spice grinder. Combine salt mixture, ginger and garlic in a small bowl. Rub spice mixture all over ribs. Drizzle sesame oil over and rub in. Cover and refrigerate ribs overnight. Preheat oven to 350 degrees. Roast ribs 45 minutes, uncovered, turning once and basting with pan drippings. Stir together hoisin and plum sauces in a small bowl. Brush all over ribs, using all of mixture. Roast ribs about 20 minutes until tender and glazed.
Serves 4 to 6.
