Ingredients (view qty in metric system instead)
Sauce: 1 cup brown sugar 1/4 cup light corn syrup 1/4 cup butter 1/2 cup heavy or whipping cream 1 1/2 tsp. vanilla extract 1/4 tsp. fresh lemon juice
Sundae: 1/2 cup chopped salted roasted peanuts 3 tbsp. Southern Comfort 1 cup sauce from above recipe 1 pint good quality chocolate ice cream
Directions
For Sauce: Combine sugar, corn syrup and butter in a small saucepan. Cook, stirring, until sugar is dissolved. Increase heat and boil till mixture reaches 280 degrees on a candy thermometer. Remove from heat and stir in cream, vanilla and lemon juice until smooth. Cool sauce until thickened.
For Sundae: Combine 3/4 of peanuts, Southern Comfort and sauce in a small saucepan. Cook over low heat, stirring frequently, until smooth and heated through. Place 2 scoops of ice cream into each of 2 dishes. Spoon sauce over and sprinkle with remaining peanuts.
Serves 2.
