Ingredients (view qty in metric system instead)
Topping: 1 cup rolled oats 1 cup sliced almonds, ground finely 1 tbsp. all purpose flour 1 tsp. baking powder 2 tbsp. butter, room temperature 1/3 cup brown sugar 1 large egg 1/8 tsp. almond extract 2/3 cup sweetened shredded coconut
Filling: 2 1/2 pounds ripe peaches, peeled, pitted and thinly sliced 1/3 cup sugar 2 tsp. all purpose flour 2 tsp. fresh lemon juice
Directions
For Topping: Preheat oven to 325 degrees. Spread oats on a sheet pan and bake about 10 minutes until golden brown, stirring occasionally. Transfer pan to a rack and cool oats completely. Stir together cooled oats, ground almonds, flour and baking powder in a medium bowl. Cream together butter and sugar in a medium bowl. Add egg and beat until light and fluffy. Stir in almond extract, oat mixture and coconut.
For Filling: Preheat oven to 375 degrees. Butter a 10 inch baking dish. Place peach slices in a large bowl. Add sugar, flour and lemon juice and toss to coat. Spread peach mixture in the prepared dish. Bake 30 minutes, stirring once, until peaches are bubbly.
Crumble topping over peaches. Bake about 25 minutes until topping is crisp and golden. Transfer crisp to a rack and cool before serving. Serve warm or at room temperature.
Serves 6 to 8.
