8 ounce package lasagna noodles 1 pound ground beef 1 cup finely chopped celery 3/4 cup finely chopped onion 1 clove garlic, peeled and minced 2 tsp. dried basil 1 tsp. dried oregano 3/4 tsp. salt 1/2 tsp. pepper 1/2 tsp. dried Italian seasoning 1 cup half and half 3 ounces cream cheese, room temperature 1/2 cup dry white wine 2 cups shredded Cheddar cheese 1 1/2 cups shredded Gouda cheese 1 1/2 cups small curd cottage cheese 1 large egg, beaten to blend 12 ounces thinly sliced Mozzarella cheese
Directions
Preheat oven to 375 degrees. Lightly coat the inside of a 13x9 inch baking pan with cooking spray. Heat a large pot of lightly oiled and salted water to a boil. Add lasagna noodles and boil until just done, stirring frequently. Drain noodles and cool under cold, running water. Drain noodles well and set aside. Combine ground beef, celery, onion and garlic in a large skillet. Brown beef over medium heat, breaking up clumps. Drain fat from the skillet. Stir basil, oregano, salt, pepper, half and half and cream cheese into the beef. Cook, stirring, over low heat until the cream cheese is melted. Stir in Italian seasoning and white wine. Add the Cheddar and Gouda cheeses to the skillet and stir until melted. Remove the skillet from the heat. Stir together the egg and cottage cheese in a medium bowl. Fit 4 of the lasagna noodles into the bottom of the prepared pan. Spoon half of the beef mixture evenly over the noodles. Place 4 ounces of the Mozzarella slices over the beef. Spread half of the cottage cheese mixture evenly over the Mozzarella. Layer 4 lasagna noodles over the cottage cheese and press down lightly. Spread the remaining beef and cottage cheese mixture over the noodles. Layer with another 4 ounces of the Mozzarella. Top with the remaining noodles and the remaining Mozzarella cheese. Bake lasagna 30 to 35 minutes until heated through and cheese is melted. Let lasagna stand 10 minutes before slicing and serving.
Serves 6 to 8.
