Ingredients (view qty in metric system instead)
4 large stalks broccoli 4 red snapper fillets, about 6 to 8 ounces each 1 can cream of mushroom soup 1/4 cup grated Parmesan cheese 1 1/2 tsp. paprika
Directions
Heat a medium saucepan of lightly salted water to a boil. Add broccoli stalks and boil, stirring occasionally, until just tender. Drain broccoli well and cool under cold, running water.
Preheat oven to 350 degrees. Grease the inside of a medium baking dish. Roll one snapper fillet around each broccoli stalk and place in the prepared dish. Spread the mushroom soup over the fish. Sprinkle with Parmesan and paprika. Bake 20 to 30 minutes until fish is cooked through. Serve immediately.
Serves 4.
