Ingredients (view qty in metric system instead)
4 cups kosher salt or 2 cups table salt 2 gallons cold water + additional 12 to 14 pound turkey, rinsed, neck and giblets removed 2 medium onions, peeled and chopped 1 medium carrot, peeled and chopped 1 stalk celery, chopped 4 sprigs fresh thyme 12 cups prepared stuffing 4 tbsp. melted butter
Directions
Dissolve salt in water in a large pot. Add turkey and refrigerate 4 to 6 hours. Remove turkey from brine and rinse well. Pat dry inside and out with paper towels. Place turkey breast-side up on a baking pan. Refrigerate 8 to 24 hours. Preheat oven to 400 degrees. Place vegetables and thyme sprigs in a shallow roasting pan. Pour 1 cup water over. Microwave 6 cups stuffing until it reaches 120 to 130 degrees. Spoon hot stuffing into turkey cavity. Secure opening with skewers or tie closed. Brush turkey breast with melted butter. Place breast-side down on a foil lined rack in the prepared roasting pan. Brush back with melted butter and roast 1 hour. Reduce oven to 250 degrees and roast turkey an additional 2 hours, adding more water to pan if necessary. Increase oven to 400 degrees and turn turkey breast-side up. Brush breast with melted butter. Roast 60 to 90 minutes until a thermometer inserted in thigh reads 165 degrees. Remove turkey from oven and let stand 10 to 15 minutes before serving.
Serves 10 to 12.
