Ingredients (view qty in metric system instead)
1 pound grated sharp cheddar cheese 1 cup butter, softened 1 large egg yolk 1/4 cup Dijon mustard 2 tbsp. ground dry mustard 1/4 cup black and yellow mustard seeds 1 tsp. salt 2 cups all purpose flour
Directions
Combine cheddar and butter in a food processor and blend until smooth. Add egg yolk, Dijon, dry mustard, mustard seeds, salt and flour. Pulse to combine. Transfer dough to a large bowl. Cover and refrigerate 15 minutes. Divide dough in half. Roll each half into a 12 inch long log. Wrap logs in wax paper and place on a sheet pan. Refrigerate at least 2 hours until firm.
Preheat oven to 350 degrees. Grease several sheet pans. Unwrap dough logs and cut into 1/8 inch thick slices. Place dough slices 1 inch apart on prepared pans. Bake crackers about 12 minutes. Cool completely on racks. Store in an airtight container in a cool, dry place.
Makes about 10 dozen crackers.
