Here's some common recipe substitutions which may save you a hurried trip to the store:
- 1 cup butter: 1cup margarine or 7/8 cup solid vegetable shortening + 1/2 tsp. salt
- 1 cup sour cream: 7/8 cup sour milk + 3 tbsp. butter or 8 ounces plain yogurt
- 1 cup whole milk: 1 cup reconstituted nonfat dry milk + 2 1/2 tbsp. butter or margarine or 1/4 cup sifted dry whole milk powder + 7/8 cup water
- 1 cup skim milk: 4 tbsp. nonfat dry milk + 1 cup water
- 1 cup light cream: 1 cup undiluted evaporated milk
- 1 cup heavy or whipping cream: 1/3 cup butter + 3/4 cup milk
- 1 cup half & half: 3 tbsp. butter+ 7/8 cup milk
- 1 cup buttermilk: 1 tbsp. white vinegar or lemon juice + enough milk to equal 1 cup(let stand 5 minutes)
- 1 tsp. lemon juice: 1/2 tsp. white vinegar
- 1 cup sweet milk: 1 cup sour milk or buttermilk + 1/2 tsp. baking soda
- 1 cup molasses: 1 cup honey
- 1 cup honey: 1 1/4 cups sugar + 1/4 cup liquid
- 1 cup sugar: 1 cup brown sugar or 1/2 cup honey(reduce recipe liquid amount by 1/2 cup)
Keep in mind that some substitutions may alter flavor or consistency of some recipes.
